最怕人「大口氣」!口出狂言、不自量力那種「大口氣」固然令人厭惡,但口裡飄出異味的「大口氣」更叫人害怕!吃哪些食物會引致口臭?下次見客或約會前,要避開以下食物,以免出現口臭的尷尬情況。
🤭 生蒜頭
吃韓式烤肉,用菜包着燒肉、泡菜、生蒜片來吃,滋味無窮,但吃罷嘴裡容易留有生蒜的臭味,因其含大蒜素硫化物,於嘴裡留有強烈異味。
🤭 生洋蔥
吃三文治、熱狗、沙律時,如內裡夾有生洋蔥,吃時嘴裡有一股嗆辣味道,因洋蔥含硫化物,經咀嚼及口腔細菌交互作用後便會產生難聞味道。
🤭 牛奶/芝士
牛奶及芝士屬高蛋白質食物,會在嘴內產生阿摩尼亞臭酸味,形成口臭。
🤭 煎炸食物
中醫理論認為常吃煎炸油膩食物,容易令腸胃濕熱,消化能力差,臭味上湧至口腔溢出,形成口臭。
🤭 咖啡與酒精飲品
咖啡中的咖啡因以及酒精都有利尿作用,容易令人口乾,口腔亦未能產生足夠唾液沖走細菌,便會形成口氣。
遇上飲食後出現的口臭情況,宜多喝暖水、暖無糖檸檬水或綠茶;如果口臭問題持續,宜諮詢註冊中醫師調理身體。

Foods that can cause bad breath
It is a known fact that bad breath repels people. What kinds of foods cause us to have a bad breath? To avoid unnecessary awkward moments, do not consume the following before going on a date or meeting clients.
🤭 Raw garlic
During Korean barbecue, we tend to eat barbecued meat, kimchi, and raw garlic that are wrapped in leafy greens. No doubt it tastes good, but the raw garlic can leave a pungent smell in our mouth because there is allicin sulfide in it.
🤭 Raw onion
If there are raw onions in the sandwich, hotdog, or salad we eat, we experience a sharp pungent taste when we chew on them. This is because a variety of Sulphur compounds in the raw onions would interact with the bacteria in the mouth to initiate a chemical reaction, which tends to give out an unpleasant odor.
🤭 Milk/cheese
Milk and cheese are high in protein, and can produce a sour ammonia taste in the mouth that is equivalent to a bad breath.
🤭 Fried foods
Chinese Medicine believes that eating fried and oily foods regularly can cause damp heat to accumulate in the stomach and the intestines. When the digestive function is disrupted, the smell from the digestive organs might fill the oral cavity, causing bad breath.
🤭 Coffee and alcoholic beverages
Both the caffeine in coffee and alcohol have diuretic properties, and they can cause the mouth to become dry. The lack of saliva will encourage bacterial growth, and this can cause a bad odor to develop in the mouth.
When bad breath lingers after eating certain foods, we should drink warm water, warm sugar-free lemon juice, or green tea. If the condition persists, consult licensed and registered Chinese medicine practitioner.

整理了一下資料。。。

一般來說,純可可粉依製程分成兩種,一種是天然可可粉(Natural),一種是鹼化可可粉(Alkalized or Dutched)。
我想很多人的認知,都會覺得「天然的尚好」,所以購買時,就會選擇天然可可粉。
🌸天然可可粉(Natural) 顏色較淺,製程是將烘烤過的可可豆除去所有的油脂之後, 磨成極細的粉末,因為是直接把可可豆磨成粉, 故保有最多可可的味道且帶有些微的果酸味,故味道較酸,也因為沒有油脂,故味道苦澀,而這些複雜又強烈的味道會蓋過其它食物味道,所以通常不適合直接飲用,較適合做固態的產品,例如烘焙或做巧克力。
但因為天然可可粉帶有酸味,一般烘焙時,會在製作蛋糕或甜點時加入蘇打粉,因為酸性的可可加上小蘇打會產生反應,釋放出二氧化碳,蛋糕烘烤後,口感與香氣會較佳。
🌸鹼化可可粉(alkalized)又稱荷蘭式可可(Dutched),是指可可豆在加工過程中加入了食用鹼,從而達到調節ph值的目的,降低苦澀味,同時可可粉的顏色也加深,香氣也比天然可可粉濃的多,使可可更加香醇順口,重要的是因為能溶於水,故用途範圍較廣 。
可可豆最早的食用方式都是飲品。是到了1879年的時候Rodolph Lindt做了conche才有現在我們吃的綿密滑順巧克力
。
可可豆大約50%是油脂,所以要把磨成糊狀的可可糊加水是沒有那麼容易攪拌均勻的。1828年時,一位荷蘭的化學家,Coenraad Johannes Van Houten,發明了現今所知道的可可粉的作法。
因可可豆約50%是可可脂,研磨後並不是那麼容易可以在水裡面均勻分散,所以Van Housten首先設計了一台搾油機,將可可豆磨成可可膏後,榨出約50%的可可脂,剩下約22-27%的可可脂在那可可餅內。
之後可可餅被鹼化以及粉碎,就得到了Dutched的可可粉了。這樣子的可可粉的有比較高的混融度(miscibility),可以比較容易的跟水做融合。
鹼化的可可粉顏色變深色,但是可可的風味變淡。所以既有印象深色的可可是味道比較濃的不一定是正確的。
為什麼鹼性處理過後的可可粉顏色反而變深色了呢?因為鹼性處理過程中,高溫以及鹼性有利於製造深色物質的變化像是糖裂解,Millard reaction,以及花青素(anthocyanin)轉化為咖啡色的pigment,所以dutched 可可粉顏色比天然的要深色。
鹼化了原來酸性的可可粉,pH變成中性,這可可粉也叫做Dutched cocoa powder或European-styled cocoa powder。
使用可可粉於烘焙時,中性的dutched可可粉不但沒辦法跟鹼性小蘇打粉(baking soda)產生chemical leavening的效果,小蘇打粉的苦味以及肥皂口感也有可能在最終的產品內品嚐到。
🌸所以當配方中有小蘇打時,切忌使用鹼化可可粉,否則會在麵糊裡產生過多的鹼,不但影響蛋糕膨發,而且會有股類似肥皂的怪味。
另一樣烘焙時常用到的泡打粉(baking powder)是中性的,他的組成是小蘇打粉跟另外2種的酸。分別在泡打粉加入液體或加熱的時候跟小蘇打粉產生反應而有chemical leavening的效果,所以是比較適合跟中性的dutched可可粉做烘焙上的搭配。
但是泡打粉跟沒有鹼化的可可粉搭配使用也是沒有問題的,所以最終決定在使用者想要什麼樣風味以及口感的產品。
🌸天然可可粉,顏色較淺,鹼化可可粉,明顯看的出來顏色較深。
可可粉的顏色取決於鹼化的程度。
過度鹼化的深黑色可可粉雖然顏色討喜,
但因為過度鹼化而使香氣減弱,其實反而會失去可可原本的風味呢!

These conditions improve by consuming alkaline ionized water at the alkaline level around pH8.5. At this pH level, your body is more easily hydrated and maintained at the optimum healthy balance.
In Japan, the widely used method of prescribing alkaline ionized water to patients with various medical conditions, such as diabetes, heart conditions, arthritis. The Japanese reports can be view via our ‘News’ section, with the provision of Chinese translation.
Our most common goal in life is keeping one young and well-being. How to achieve it is the crucial question? An analogy to this phenomenon is that metal gets rusty once exposed to the atmosphere. In the presence of moisture, the process quickens. The chemical reaction is called oxidation. Our body goes through a similar process and is called ‘Aging.’ The body ages because of the rate of our body cells die far quicker than it regenerates. For the cells to regenerate more speedily. We must provide the body with the optimum condition, with a healthy optimum pH level and high Oxidation Reduction Potential (ORP). The more used term is ‘antioxidant rate.’ Ionized Alkaline Water has the benefits to raise ORP level. ORP is measured in millivolts (mv), and it’s the potential difference between the electrodes when an electric current to pass through it. The positive (+ve) readings translate to the ease of the current to move, the higher the number, the quicker the oxidization process. The ORP of many forms of our common intakes, such as general drinking water, coffee & tea or soda drinks. Their related ORP varied very considerably, mainly on the positive range of +300(mv) to +500 mv. Opposite results concluded when the tested is with Ionized Alkaline Water. Most results will indicate readings between -400mv to -800mv. This negative value indicates the level of resistance to oxidation; this is the set-out goal by slowing down the aging process.
